 2 tsp xanthan gum
 2 cups sugar
 7 tsp baking powder
 2 tsp salt
 6 tbsp oil
 1 ½ cups milk
 2 eggs
 2 cups mashed bananas
 2 cups chopped nuts (optional)

Preheat the oven to 350°.

Spray 3 regular loaf pans with Pam (or grease and flour using Eating Gluten Free All-Purpose Flour Mix). Mix dry ingredients. Mix wet ingredients.

Combine dry and wet ingredients together. Beat well. Pour into pans.

Bake about 50 minutes (until a knife inserted in the middle of a loaf comes out clean).
