 8 cups Eating Gluten Free Rolled Oatsyou can use rolled or quick oats
 ½ cup brown sugar
 1 tsp sea salt
 1 cup coconut
 2 cups nuts and seedsI use 1 c. slivered almonds and 1 c. pecan pieces
 ½ cup honey
 ½ cup olive oil

Bake 300°

Place oats, brown sugar, salt, coconut, and nuts, in a bowl, and mix together. In another small bowl, mix the honey and oil together and pour over the oat mixture. Stir in well.

Spread a medium thin layer in a cookie sheet with sides and bake for 15 minutes. Stir well, bake for an additional 5 to 15 minutes. Watch carefully after the first 5 minutes. When finished it should be golden brown. After baking and cooling add any other items you may want to add, banana chips or other fruit, craisins or raisins, chocolate or vanilla chips, or M&M’s. Some of these items may turn your granola into “gorp” instead, but that’s good too. I just leave it as it is and it’s wonderful.
