 1 tsp baking soda
 ½ tsp salt
 1 tsp xanthan gum
 ½ cup butter
 1 cup brown sugar
 1 egg
 1 tsp vanilla
 1 cup milk
 1 cup chopped nuts (optional)

Heat oven to 375°. Grease muffin tins.

In a bowl whisk together flour, baking soda, salt and xanthan gum. Set aside.

In a large bowl cream butter, brown sugar, and egg until fluffy. Mix in vanilla.

With a rubber spatula fold in half the flour and half the milk, repeat until all the flour and milk has been used. Mix well. Stir in nuts. Fill muffin tins 2/3 full.

Bake for 15 minutes.
