 1 ½ tsp xanthan gum
 2 tsp sugar
 1 tsp salt
 ½ cup sour cream
 ½ cup warm water

Combine and whisk together the dry ingredients. Mix the hot water with the sour cream and add to the dry ingredients. Mix for 1 minute by hand or in a stand mixer.
*The dough will be slightly sticky - more sticky than playdough, but less sticky than cookie dough.

Separate the dough into 1-2 in round balls. Roll out each ball in between waxed or parchment paper or plastic wrap. If the dough is too sticky, dust it with some of the Eating Gluten Free All-Purpose Flour to keep it from sticking.

Cook on a hot griddle for about 1 minute per side.
