 ¾ cup Eating Gluten Free All-Purpose Flour
 ½ tsp Salt
 2 tsp Xanthan Gum
 2 Large Eggs
 1 tbsp Oil

Beat the eggs lightly with the oil. Mix in the flour mix, salt, and xanthan gum. Work it into a firm ball. If the dough feels too sticky and wet add more Eating Gluten Free All-Purpose Flour (1 tbsp at a time.)

Dust a clean countertop with flour. Roll out the dough as thin as possible. Cut into whatever size of pasta you want. Once the pasta is cut, you can cook it or freeze it for later use.

Cook the pasta in salted water with 1 tbsp oil added for about 10-15 minutes, depending on how thick your pasta is. Test to see when it is done.
