 3 Chicken Breast, boneless skinless
 1 (15 oz Can) Petite Diced Tomatoes
 1 (4 oz Can) Green Chilis, Diced
 1 Garlic Clove, minced or pressed
 2 tbsp Dried Minced Onion
 12 tsp Cumin
 ½ cup Water
 Eating Gluten Free Sea Salt and Pepper to taste...

Combine all ingredients in a crockpot.*
Cook on low for 8-10 hours, or on high for 4-6 hours. Shred.

*Forget to get this started early enough in the day?
Just place all the ingredients in a large pot. Bring to a boil over high heat.
Reduce heat to medium and simmer for about 40 minutes or until chicken shreds easily

Serve with rice, beans, cheese, and tortillas.
