 ½ Medium Sweet Onion, Diced
 3 Stalks Celery, Diced
 2 tbsp Oil
 2 cups Rice
 1 8 oz. CansTomato Sauce
 2 ¼ cups Boiling Water
 2 tsp Chili Powder
 1 tsp Cumin
 1 tsp Italian Seasoning
 Eating Gluten Free Salt and Pepper to Taste

In a large saucepan, heat the 2 tablespoons oil. Sauté onion and celery over medium-high heat until softened.

Add the rice, and sauté until the rice starts to become opaque. Decrease the heat to medium low.

Combine tomato sauce, boiling water, and spices. Pour tomato sauce mixture over rice.
Cover and cook over medium-low heat for 20 minutes.
Remove from heat and serve warm.
