Rice becomes a staple for most Celiacs. Cooking instant rice may be faster, but it quickly becomes expensive. Besides, instant rice products just can't beat the flavor of the home-cooked original.

 2 cups Boiling Water
 1 cup Rice* We generally use long grain rice, but you may also use short grain rice. Use Glutinous or Sweet Rice if you want your rice to be really sticky. (Don't be confused by the name. Glutinous rice does not contain the gluten protein that makes Celiacs ill.)
 2 tbsp Oil

Add rice to boiling water. Return to boil. Cover and reduce heat to medium-low.
Cook for 20 minutes.

Remove from heat and serve. Makes 2 cups cooked rice.
