 1 cup shortening
 1 cup brown sugar
 1 cup white sugar
 2 eggs
 1 tsp vanilla
 ½ tsp xanthan gum
 ½ tsp baking soda
 ½ tsp salt
 ½ tsp cinnamon
 12 ½ cups oats
 1 cup white chocolate chips
 1 cup craisins
 seedless raspberry jam

First cream together shortening, brown sugar, and white sugar. Add one egg at a time and mix in. Add vanilla and mix on slow for 2 minutes.

Combine Eating Gluten Free All-Purpose Flour, xanthan gum, soda, salt, and cinnamon and add to creamed sugar. Add and mix in oats, white chocolate chips, and craisins. Place ¼ tsp. Seedless raspberry jam in thumbprint on each cookie.
