Modifying Recipes That Aren’t Gluten Free

Modifying recipes can take time, patience and a willingness to keep trying. When you modify recipes that are usually made with gluten it can take some trial and error to get it to work the way you want. You can also modify recipes to remove dairy, or adjust them to be vegan with the right ingredients such as egg replacer, and potato milk or almond milk.

TRY IT. And then TRY IT AGAIN.

Don’t try to adjust a regular bread recipe by simply exchanging flours. It will not work and you will get discouraged. There are several fabulous GF bread recipes that we have thoroughly tested, we encourage you to modify one of those to fit your needs instead of taking a recipe that originally was created for bread made with gluten.

Use recipes that are moist already – they hold together better.

Recipes that are supposed to be drier (like cornbread) also work well because no one can tell there’s rice flour in them.

Use the Eating Gluten Free All-Purpose Flour Mix. We spent years of trial and error to create a flour that will work well in any recipe, and act and taste the most like wheat flour. The right flour mix makes all the difference in your recipes.

DON’T FORGET THE XANTHAN GUM. It’s necessary.

For Cakes: If your first attempt turns out too dry or heavy, try adding about ½ cup of applesauce, mayonnaise, or sour cream.

If you have problems with lactose, substitute yogurt for buttermilk, and use lactose free milk. Other options to replace dairy can include potato milk, almond milk, or any other non-dairy milk. Things will still turn out.

If you have other allergies like an allergy to eggs, you can use egg replacer to substitute and have similar outcomes.
